Три рецепта творожной пасхи

Традиционная, медовая и шоколадная
Творожная пасха - непременная принадлежность пасхального стола. Она символизирует землю обетованную, пасхальное веселье и райскую жизнь своим "молоком и медом". Традиционная пасха должна иметь форму четырехгранной пирамиды с усеченным верхом. Творог для пасхи лучше покупать сухой, на развес, а сметану брать густую, жирную. Сахарный песок должен быть как можно более мелким - в идеале возьмите сахарную пудру. После приготовления пасху необходимо на 12 часов убрать в холодильник, при этом держать ее надо под грузом.

Традиционная творожная пасха

Ингредиенты:
- 500г творога,
- 70г сливочного масла,
- 2 ст.л. сметаны,
- полстакана сахарной пудры,
- 5 яиц,
- 200мл сливок,
- изюм, орехи, цукаты.

Рецепт:
1. Протереть творог через сито (можно провернуть через мясорубку), смешать с растопленным маслом и сметаной. Добавить сахарную пудру, хорошо размешать.
2. В отдельной кастрюльке взбить 5 желков и 5 ст.л. сахарной пудры, поставить на огонь и непрерывно помешивать до загустения. Дать остыть и смешать с творогом.
3. Добавить изюм, орехи, цукаты, перемешать, млотно утрамбовать в специальной формле (или в обычно мисочке). Поставить сверху груз и убрать в холодильник на ночь.
4. В пасхальное утро можно залить пасху сливочным соусом: на 1 стакан сливок - 1 ст.л. сахара и 1 ст.л. крахмала, проварить на медленном огне до загустения.


Медовая пасха

Ингредиенты:
- творог - 500г
- сахар - 2 ст.л.
- мед - 2 ст.л.
- яйцо (желтки) - 4 шт.
- масло сливочное - 3 ст.л.
- сметана (или сливки) - 3 ст.л.

Рецепт:
1. Яичные желтки растереть с сахаром, добавить мед, размягченное масло и взбить до образованя пышной однородной массы.
2. Свежий сухой творог протереть через сито, добавить сметану, перемешать, вводя небольшими порциями, с яично-медовой смесью. Подготовленную массу переложить в форму и поставить под пресс. Держать в холодильнике примерно 12 часов.


Шоколадная пасха

Ингредиенты:
- 500г творога,
- 1 плитка черного шоколада,
- 50 г сахарной пудры,
- полстакана сметаны,
- 50г сливочного масла,
- 1/2 стакана цукатов.

Рецепт:
Свежий и сухой творог протереть и смешать со сливочным маслом и сметаной. Хорошо размешать и добавить цукаты и шоколад, измельченные вместе с сахарной пудрой. Массу перемешать, выложить в форму, поставить на сутки в холодильник. При подаче украсить сухофруктами, орехами и цукатами.
