Cinnamon Stars

Ingredients for approx. 100 stars:
• 500g whole almonds
• 400g icing sugar
• 4 teaspoons of honey
• 3 teaspoons ground cinnamon
• 3 eggs

Method
Ground the almonds finely. Beat 2 egg whites until frothy - but not too hard - and mix with 300g icing sugar, honey, cinnamon and the ground almonds. Roll the mixture 1cm thick between 2 layers of foil, cut out stars and place them on a baking tray covered with baking paper. Beat the remaining egg white with the rest of the icing sugar until it develops a syrup like texture. Use a brush to spread the icing on top of the star biscuits and bake in pre-heated oven at 150°C for approx. 12mins. Take them out when the icing is hard. The pastry should still be a bit soft. Let them cool down.
