4. Plan menus around what's on sale. Then make extra and freeze. Zippered freezer bags take up less room in the freezer than other types of containers.

Ingredients:
  • ½ cup raw chopped tomatoes
  • 3 slices bacon, cooked until crisp and crumbled
  • 2 tablespoons mayonnaise (regular)
  • Black pepper to taste
  • 3 to 4 large leaves of green lettuce
Preparation:
Mix chopped tomato with crumbled bacon, mayonnaise, and a generous amount of pepper. Spoon mixture into the center of the leaves, and wrap in either a burrito or taco shape.

Nutritional Information: Whole recipe has 5 grams effective carbohydrate plus 2 grams fiber, 7 grams protein, and 362 calories. Note that this is not a great protein source; most of the calories (202) come from the fat in the mayonnaise.

Cooked Feta Cheese Starter

Ingredients:

A packet of Feta Cheese
A handful of Cherry tomatoes
Half a pepper (red or green)

Olive oil
Oregano
Salt - Pepper

Tin foil

Instructions:

Cut peppers into rings.
Cut cherry tomatoes in half.
Place them onto a piece of tin foil, large enough to cover the ingredients.

Crumble up the feta cheese and put over the top of the vegetables .
Sprinkle with olive oil, salt and pepper and oregano. Fold over the tin foil to form a "package". Make a couple of small holes for air, using a fork.

Bake in the oven for 20 min, 180oC

Notes:

Serve with low carb pita bread if desired.
